Farina di Neccio della Garfagnana DOP pancakes

Ingredients for 4 people: 
  • 500 g of Farina di Neccio della Garfagnana DOP
  • 1 lt. of water
  • 1 pinch of salt
  • lard or oilseed
  • fresh ricotta or marmalade

From the mountains of the Tuscan Appennino in Central Italy (Lucca, Toscana), a simple dessert to treat kids and adults.

Preparation steps: 
  • Pour flour, salt and water in a bowl.
  • Whip the ingredients until you have a soft, smooth batter.
  • Let it rest for 1 hour.
  • Put the lard or the oil in a pan.
  • Put on medium heat for 5 minutes.
  • Pour the batter in the pan with a ladle.
  • Brown on both sides.
  • Serve hot alongside ricotta cheese or marmalade.
