Ciliegia dell'Etna DOP flowers
Ingredients for 4 people: 
  • 600 g of Ciliegia dell'Etna DOP
  • 150 g of butter + a bit to grease the moulds
  • 150 g of Savoiardi cookies
  • 150 g of amaretti
  • 125 g of sugar
  • 6 eggs
  • cinnamon powder

Enjoy a sweet moment with this delicious fruit from Southern Italy (Sicily).

Preparation steps: 
  • Wash the cherries.
  • Remove the seeds.
  • Pop the eggs open and separate white from yolk.
  • Put the butter in a bowl.
  • Whip it.
  • Add the sugar.
  • Mix the ingredients.
  • Add the egg yolks one at a time (wait until one is thoroughly mixed before adding the next).
  • Add the crumbled cookies and a a bit of cinnamon.
  • Mix all the ingredients thoroughly.
  • Pour the egg whites in another bowl.
  • Beat them until stiff.
  • Add the egg whites to the mix stirring from the bottom up.
  • Add the cherries.
  • Mix.
  • Grease 4 small pudding moulds.
  • Preheat the oven at 180°C.
  • Pour the cherry mix in the moulds.
  • Place the moulds in the oven and cook for 30 minutes.
  • Take the moulds out.
  • Let them cool for 15 minutes.
  • Place the moulds face down on dessert plates.
  • Serve hot or cold.
