Balsamic Vinegar Rabbit

Ingredients for 4 people: 
  • 1 rabbit
  • 1 glass of strong wine vinegar
  • 1 clove of garlic
  • 3 tablespoons of chopped parsley
  • 2 tablespoons of Aceto Balsamico Tradizionale di Modena DOP
  • extra-virgin olive oil
  • salt and pepper

A country dish from Central-Northern Italy (Modena, Emilia Romagna) with a sweet and sour taste.

Preparation steps: 
  • Cut the rabbit in chunks.
  • Pour the oil in a pan.
  • Put it on medium heat for 1 minute.
  • Put the rabbit chunks in the pan.
  • Cook for 5 minutes on medium heat.
  • Pour the wine vinegar, the garlic clove and 2 tablespoons of chopped parsley in.
  • Put the lid on.
  • Cook on low heat for 15 minutes.
  • Add the Aceto Balsamico and 1 more tablespoon of chopped parsley.
  • Remove the lid.
  • Cook for 15 more minutes on low heat.
  • Serve hot with a radicchio salad on the side.
